Wash the leek well and chop it finely, dice the peeled potatoes and the onion.
Then, fry the potatoes and onion in olive oil until hot, add ¾ l vegetable stock and cook until the potatoes are soft.
Mash the potato mixture and season to taste with salt, pepper and nutmeg. Just before serving, add the leek and bring to the boil again. Serve in a soup dish and garnish with a little cream to taste.
